To Prepare Dashi (Soup Stock):
Wipe the surface of the kombu lightly with a dry cloth (do not wash).
Place a piece (10–15g) in 1 liter of water.
Heat slowly and remove the kombu just before boiling.
Use the broth for miso soup, noodle soup, nimono, or hot pot.
For Simmered Dishes / Cooking:
Cut kombu into desired size.
Simmer until soft, then use in beans, oden, rolls, or tsukudani.
Kombu used for dashi can be repurposed for cooking (zero waste).
