Founded in 1918 in Kobe, Rokko Miso is a long-established miso brewery based in Ashiya, Hyogo Prefecture, known for its craftsmanship and dedication to traditional fermentation methods. This white sweet miso (shiro miso) is made with carefully selected Japanese rice and soybeans, naturally fermented in the cool cellars of Ashiya.
With a low salt content (approx. 5%) and an abundant amount of koji, this miso has a gentle sweetness and smooth texture, making it ideal for Kyoto-style dishes, ozoni (New Year soup), miso soup, den-gaku (miso-glazed dishes), and Japanese dressings.
Each batch is crafted by hand using the golden ratio of rice, soybeans, and salt, preserving the mild, mellow flavor beloved in Kansai homes for generations.
