El yōkan es un postre tradicional japonés elaborado con pasta de judías rojas azucarada (anko), agar-agar (una sustancia gelatinosa derivada de algas marinas) y azúcar, lo que le da una textura firme y gelatinosa. Generalmente servido en forma de bloque, el yōkan se corta en finas rebanadas rectangulares antes de disfrutarlo. Tiene un sabor suave y rico, y suele ser ligeramente dulce, lo que lo convierte en el acompañamiento perfecto para el té verde.

El yōkan se presenta en diferentes variedades: el koshi-yōkan es la versión suave y colada, y el tō-yōkan, con una textura más grumosa gracias a la inclusión de granos enteros o machacados. Otras variantes pueden incorporar sabores como matcha o castaña.
