Japanese sweet soy sauce (known as kecap manis or amazu shoyu) is a thick, dark soy sauce with a distinct sweet flavor. It is made by adding sugar or other sweeteners, such as honey or mirin, to regular soy sauce, and sometimes also includes a hint of vinegar. This creates a syrupy, sweeter version of traditional soy sauce with a rich umami base.
