Through Yamaroku’s unique “saishikomi” (double-brewing) process, freshly brewed raw soy sauce is returned to the barrel, mixed again with new soy mash instead of salt, and aged for another two years. This rare technique results in an exceptionally rich, mellow, and deeply aromatic flavor — a perfect balance of umami, sweetness, and complexity.

Made using natural fermentation and traditional kioke wooden barrels, Tsurubishio honors Japan’s centuries-old brewing heritage, with microbes and time crafting flavor beyond industrial production. This is the soy sauce that defines washoku — the soul of Japanese cuisine.
